Gingerbread Waffles

Perfect for Christmas morning and during the holidays

Ingredients

  • 2 c. all-purpose unbleached white flour
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1/2 c. butter
  • 1 c. molasses
  • 1-1/2 t. baking soda
  • 1 egg
  • 1 c. low-fat buttermilk
  • syrup

Instructions

In a large bowl, add flour, salt and cinnamon; whisk to break up flour lumps; set aside.

In a medium sauce pan (2-3 qt.), heat molasses and butter until melted. Remove from heat and whisk in baking soda (will foam up). Whisk in milk and egg.

Pour mixture from sauce pan into dry ingredients and mix with an electric mixer on medium speed, just until smooth.

Preheat waffle iron and lightly coat with oil or non-stick spray. Pour 1/2 cup batter onto waffle iron, and cook to desired doneness. Make sure the iron is not too hot.

Be sure to brush iron with oil or spray occasionally.

To serve: Spread with butter and syrup and enjoy!

NOTE: Makes approximately 6 waffles. If there are any leftovers, they freeze well; just heat in microwave.
