Gingerbread Muffins
Ryan and Ben love these, especialy at Christmas


Ingredients
- 1/2 c. butter, softened to room temp.
- 1/2 c. white sugar
- 2 eggs
- 1/2 c. molasses
- 1/2 c. low-fat sour cream
- 2 c. all-purpose unbleached white flour
- 1 t. baking soda
- 1/4 t. allspice
- 1/4 t. cinnamon
- 1/2 c. raisins
Instructions
Cream butter and sugar; add eggs one at a time, beating after each one.
Stir in molasses and sour cream. Add dry ingredients to creamed mixture.
Stir in raisins.
Spoon into greased, or paper lined, muffin cups until 2/3 full.
Bake at 375 degrees for 15-20 minutes.
Serve warm with butter.
NOTE: Makes 12-15.
