German Pancake

A real favorite of ours
Great for a brunch or breakfast
Make with just apples, use a combo of apples and fresh cranberries or fresh cherries

Ingredients

  • 4 eggs
  • 1 c. milk
  • 1/2 t. vanilla
  • 1 c. all-purpose unbleached white flour
  • 3-4 granny smith or Macintosh apples (3 - 4 cups needed)
  • sugar & cinnamon to taste (estimated 1/4 c. sugar + 1 t. cinnamon)
  • 1/2 c. (1 stick) butter

Instructions

Apples:. Peel and chop apples. Sprinkle sugar and cinnamon mixture on top, stir to coat and set aside while preparing the batter.

Batter:. Mix the eggs, milk, vanilla and flour in a blender. Set aside.

Spray a 2-1/2 qt. deep casserole dish with non-stick cooking spray. Put 1 stick of butter in the casserole dish and melt in the oven at 425 degrees (this will only take about 5 minutes). Watch it so the butter doesn't burn.

When butter is melted, pour the above batter on top of the melted butter.

Top with the apples, sugar and cinnamon.

Bake at 425 degrees for 40-45 minutes, or until set. If the apples start to get too done on top, cover with a piece of foil until baking time is done. Make sure the center is done and not under cooked.

Serve with syrup.
