German Chocolate Brownies

Made for camping July 2017, a big hit!
Ingredients
- 3 large eggs
- 1 c. white sugar
- 1/3 c. packed light brown sugar
- ¼ t. salt
- 1-1/2 t. vanilla
- ¾ c. butter, melted and cooled slightly
- ¼ c. + 3 Tbls. cocoa powder, sifted
- 1 c. + 1 Tbls. unbleached all-purpose white flour
Topping
- ½ c. full fat evaporated milk
- 2 large egg yolks
- ½ c. packed light brown sugar
- ¼ c. butter, diced into 4 pieces
- ½ t. vanilla
- ¾ c. sweetened, shredded coconut, toasted
- 2/3 c. chopped pecans, toasted
Instructions
Toast Pecans: Spread the nuts in an even layer on a baking sheet. Roast at 350 degrees for 6-10 minutes. Give them a stir halfway through so they don't burn. Or, you can also use a dry skillet on high heat. Stir constantly until browned, a few minutes. Move them to a plate right away to cool down.
Toast Coconut: Place desired amount of coconut flakes in a large skillet. Cook over medium heat, stirring frequently, until the flakes are mostly golden brown. If the coconut is sweetened it tends to brown faster so, it will take less time.
Line a 9 x 9-inch baking pan with aluminum foil, leaving a 2-inch over hang on 2 sides. Spray foil with nonstick spray and lightly dust with flour, shaking out excess flour and set aside.
In a mixing bowl, whisk 3 eggs until frothy and slightly pale (about 1 minute). Add white sugar, brown sugar and salt; whisk until well combined. Stir in vanilla. Sift cocoa and flour over top, pour in melted butter and stir using a wooden spoon until combined. It will be slightly lumpy.
Pour batter into prepared pan and spread into an even layer.
Bake at 325 degrees for about 35-40 minutes. Cool completely on a wire rack.
TOPPING: In a medium saucepan combine evaporated milk, egg yolks, brown sugar and butter. Cook over medium heat, stirring constantly, until thickened (about 10 minutes). Remove from heat.
Stir in vanilla, then mix in shredded coconut and chopped pecans. Allow mixture to cool to room temperature (about 30 minutes) then spread over cooled brownies. See note below.
Cut brownies into squares just before serving.
Carefully lift brownies out of pan holding onto foil sides, and place on a hard surface.
NOTE: For cleaner cut brownies, cover and chill in freezer for about 15 minutes.
