Garlic Parmesan Chicken

Fast and easy chicken dinner with a delicious sauce.
Serve over pasta, potatoes or rice.
Ingredients
- 2 Tbls. butter
- 1 small yellow onion, diced
- 4 large garlic cloves, minced
- ¾ c. chicken broth (Kitchen Basics)
- ½ t. garlic powder
- ¼ t. coarse black pepper
- ½ t. salt
- 8 oz. sliced mushrooms, optional
- 1/2 lbs. boneless, skinless chicken breasts, sliced into ½-inch strips
- 1 c. half and half
- 2 Tbls. unbleached all-purpose white flour
- ½ c. parmesan cheese
- 3 oz. coarsely chopped fresh spinach
- pasta (fettuccine), potatoes or rice for serving.
Instructions
Turn Instant Pot to Sauté setting. When display reads HOT, add the butter. Once butter is melted, add the onions and sauté for about 3-4 minutes. Add in the garlic and sauté for 30 seconds.
Add the chicken broth, garlic powder, pepper and salt. Stir and then add the chicken and mushrooms, if using.
Cover pot and secure lid. Make sure valve is set to sealing. Set the manual pressure cook button for 8-10 minutes (this is the cooking time for the chicken strips. Let the pressure release naturally for 10 minutes and then move then valve to venting (I use a wooden spoon to do).
Remove the lid. Use tongs to place the chicken on a platter and loosely cover with foil.
Warm the half and half up in a glass measuring cup for 45 seconds in the microwave. Whisk the flour into the half and half until smooth.
Select Sauté setting. Whisk the mixture into the Instant Pot. Sauce will thicken in a few minutes. Add in the parmesan cheese, stir into sauce, and then add spinach. Season with salt and pepper to taste.
Serve chicken and sauce with noodles (fettuccine), pasta or rice.
