Fruity Muffins

Everyone's favorite and Carrie's creation

Ingredients

  • 2 lg. eggs
  • 1 c. brown sugar
  • 1/2 c. melted butter
  • 2 t. vanilla
  • 2 c. all-purpose unbleached white flour
  • 1 c. oatmeal
  • 2 t. baking soda
  • 2 t. cinnamon
  • 1 c. chopped cranberries (chop semi-frozen in mini food processor or use a knife to cut in half)
  • 1 c. grated apple
  • 1 c. (8 oz. can) crushed pineapple (do not drain)

Instructions

In a medium bowl, mix egg, brown sugar, butter and vanilla.

Stir in dry ingredients.

Fold in fruit. Batter will be somewhat thick.

Spoon batter into greased or paper lined muffin cups until 2/3 full.

Bake at 350 degrees for 20-25 minutes. Let sit in pan for 10 minutes before removing to wire rack.

NOTE: Makes approximately 18 muffins.
