Pie Iron: French Toast Stuffed with Bananas, Cream Cheese & Walnuts
We made these camping Sept. 2021 at Firefly campground. We used pie irons to cook.
Ingredients below are for 1 person. Adjust accordingly for the amount of people you are feeding.
You can also cook on a griddle or fry pan, see instructions below
Ingredients
- nonstick cooking spray or melted butter for pie irons
- 2 slices cinnamon swirl bread
- 1 egg
- 2-3 Tbls. milk
- low-fat cream cheese (2 slices of regular or use soft and spread)
- 1/2 banana, sliced
- walnuts, chopped (about 1-2 teaspoons)
- Syrup for serving
Instructions
*Ingredients are for 1 individual serving. Adjust accordingly to make several.
Heat pie iron, spray with cooking spray or coat with melted butter.
Mix egg and milk in a shallow bowl.
Take one piece of bread and spread with cream cheese. Lay that piece in the milk and egg mixture to soak bottom. Transfer to one-half of a greased square pie iron, cream cheese side up and top with banana slices and walnuts, to your liking.
Take another piece of bread and soak one side in the milk and egg mixture. Place unsoaked side on top of the cream cheese, banana slices and walnuts, then close and lock pie iron. Repeat procedure for as many as you want to make.
Cook over campfire coals until browned (watch carefully so they don't burn), check often.
When eating, be careful, the cream cheese gets hot! Serve with syrup.
GRIDDLE METHOD: These can also be made on a griddle or in a fry pan. Assemble as instructed above, but don’t soak the bread pieces individually; assemble the “sandwich” and then carefully dip into egg mixture, with both hands turn over to coat other side and place on heated griddle. Heat griddle or fry pan to medium heat. Grease with a little butter or margarine. Place assembled sandwich onto griddle. Once bottom side gets browned and toasted, flip and cook until the other side is browned and toasted.
