French Toast: Baked Good Morning French Toast

Ingredients
- 1 loaf French (Pheasant) bread (see note)
- 1 c. brown sugar
- 1/2 c. butter, melted
- 3 t. cinnamon, divided (1 t. + 2 t.)
- 3 granny smith apples, peeled and sliced
- 1/2 c. dried cranberries
- 1-1/2 c. low-fat milk
- 6 large eggs
- 1 Tbls. vanilla
Instructions
In a large bowl, combine brown sugar, butter, 1 t. cinnamon, apples and cranberries; mix to coat fruit well. Spread mixture evenly over the bottom of a greased 9 x 13 inch baking dish.
In another large bowl, mix eggs, milk, vanilla and remaining 2 t. cinnamon until blended.
Cut each slice of bread in half. Soak bread slices in egg mixture for 10-15 minutes. Arrange bread slices on top of apple mixture. Pour left over egg mixture on top of bread slices.
Cover with foil and refrigerate overnight.
Take baking dish out of refrigerator and let stand at room temperature for about 20 minutes prior to baking.
Preheat oven to 375 degrees. Bake covered with foil for 40 minutes. Uncover and bake an additional 15-20 minutes.
Remove from oven and let stand 5 minutes. Serve warm.
NOTE: You may not need the entire loaf of bread for a 9 x 13-inch pan
