Foil Packets: Philly Cheesesteak Dinners

Ingredients

  • Heavy duty foil
  • 2 large (1/2 lb.) Yukon gold potatoes, chopped into bite-size pieces
  • 1 large green pepper, chopped into bite-size pieces
  • ½ c. yellow onion, diced
  • 1 c. mushrooms, sliced
  • 3 Tbls. olive oil
  • 1 lb. lean ground sirloin
  • 1 Tbls. Worcestershire sauce
  • 2 Tbls. ketchup
  • ½ t. paprika
  • ½ t. onion powder
  • ½ t. garlic powder
  • ¼ t. cayenne pepper
  • 1-1/2 t. Italian seasoning
  • Fine sea salt and fresh cracked pepper, to taste
  • 6 slices provolone cheese

Instructions

Preheat grill to 525 degrees. If using oven, preheat to 400 degrees.

Set out 4 large sheets of heavy duty foil.

Prep Veggies: Scrub potatoes and dry them. Cut potatoes into bite-sized pieces. Cut the green pepper into bite-sized pieces (discard seeds and ribs). Dice yellow onion. Slice mushrooms.

Add all the veggies to a large bowl and add the olive oil, salt and pepper (1/2 t. salt and 1/4 t. pepper). Toss to completely coat all the veggies and then evenly distribute among the prepared foil.

Prep Meat: In the same bowl used for the veggies, add ground sirloin, Worcestershire sauce, ketchup, paprika, onion powder, garlic powder, cayenne pepper, Italian seasoning, salt and pepper, to taste (1/2 t. salt and ¼ t. pepper). Knead ingredients together until well combined and crumbly.

Separate the meat mixture evenly into 4 parts (4 oz. per portion). Coarsely break each part of beef over the veggies for each foil packet.

Grill Method: Place the packets in the middle of the grill and cook at high temp for 10 minutes. Flip the foil packets upside down and cook for another 5-10 minutes or until veggies are tender.

Oven Method: Line a large sheet pan with foil (juices leak out of packets). Place packets on the foil and bake for 20 minutes at 400 degrees. Flip packets and bake for 10-15 minutes more. Should take about 30-35 minutes.

Before Serving: Remove foil packets from heat and carefully open (watch out for the release of steam). Place 1-1/2 slices of provolone cheese on top and then return the foil packets to the heat source for a few minutes to allow the cheese to melt on top.
