Foil Packets: Fiesta Lime Chicken, Rice & Beans

Easy and delicious!

Ingredients

  • Non-stick foil (regular works, spray with non-stick olive oil cooking spray)
  • 2 small boneless skinless chicken breasts (see note)
  • CHICKEN MARINADE
  • 2 Tbls. low sodium soy sauce (Kikkoman)
  • juice of 2 limes - (2-3 tablespoons fresh lime juice)
  • ¼ c. water
  • ¼ c. oil
  • 2 t. ground cumin
  • 2 t. garlic powder
  • 2 t. chili powder
  • RICE
  • 1 c. long grain white or brown rice, uncooked (Uncle Ben’s)
  • ½ t. chili powder
  • juice of 1 lime

Topping Choices

  • sliced avocado
  • fresh cilantro
  • low-fat sour cream (Daisy)
  • tomatoes, diced
  • salsa

Instructions

In a medium bowl, whisk together all ingredients for the chicken marinade. Add chicken, toss to coat, cover and (chill for 30 to 60 minutes). Prepare the rice while chicken is marinating.

Add rice to a pot. Cover with water, bring to a boil and cook according to package directions. Drain, stir in chili powder and lime juice, and side aside.

Cut four 14-inch squares of foil and lay them out on a clean, flat surface. If not using non-stick foil, spray with non-stick olive oil cooking spray.

Spoon ¼ of the rice onto a piece of pre-cut foil (non-stick side). Then add ¼ of the beans next to the rice. Add a piece of chicken alongside the bean and rice and fold two opposite ends of the foil over the top of the fillings; pinch the seams together tightly so that it can steam. Fold or roll up the remaining ends of the foil to close the packet. Repeat process dividing remaining ingredients, among the 3 remaining pieces of foil and seal accordingly.

Grill over medium heat for about 25 minutes; be sure to turn over halfway through to ensure even cooking. Or, bake in oven at 400 degrees for 25 minutes until chicken is cooked through. May need a little longer cook time if using oven (depends on the thickness of your chicken).

Open the packets, top chicken with 1/4 of the cheese (o one slice each) and return to oven or grill (do not close the packet) for 3-4 minutes until cheese is melted.

Add desired toppings and serve.

NOTE: Chicken should be less than 1 inch thick. If you are using whole chicken breasts, be sure to pound them out to an even 3/4 inch thickness. If you have two large chicken breasts, cutting them in half lengthwise works great.
