Foil Packets: Chicken Cordon Bleu (Camping)

Perfect for camping, great flavor

Ingredients

  • 2 large boneless, skinless chicken breasts cubed
  • little potatoes (about 16-20), halved
  • 1 c. cooked ham, cubed
  • 2 t. canola oil
  • 1 t. seasoning salt
  • 1 t. Italian seasoning
  • 1/4 t. dry mustard
  • 1/4 t. black pepper
  • 1 c. shredded Swiss cheese
  • heavy duty foil

Instructions

Preheat the grill to medium-high, or about 400 degrees.

In a large bowl, combine chicken, potato halves, ham, oil, seasoning salt, Italian seasoning, dry mustard and black pepper. Stir well.

Lay one piece of tin foil on top of another and spray the center lightly with nonstick spray.

Spoon ¼ of the chicken mixture into the center of the foil, and fold to seal completely. Repeat process 3 more times.

Grill over direct heat for about 20 minutes, until a meat thermometer inserted in the thickest piece of chicken reaches 165 degrees.

Open packets and sprinkle each with ¼ cup cheese. Close the grill for 2-3 minutes, just until melted.
