Foil Packets: Apple Pies (Camping Dessert)

Makes 4 foil packets

Ingredients

  • Non-stick foil (see note below)
  • 3 large granny smith or Mac apples, diced into approximately ΒΌ inch pieces (peeling is optional)
  • 2 t. lemon juice
  • 2 t. cornstarch
  • 2 Tbls. white sugar
  • 1/4 c. packed brown sugar
  • 1 Tbls. cold butter cut into small pieces
  • 1 t. ground cinnamon
  • vanilla ice cream, for serving

Topping Mixture

  • 1/4 c. quick cook oats (old fashioned oats will also work)
  • 1/4 c. unbleached all-purpose white flour
  • 1/4 c. packed brown sugar
  • 1 t. ground cinnamon
  • 1/4 c. cold butter, cut into small pieces

Instructions

Preheat grill to medium heat or oven to 425 degrees.

Prepare four pieces of non-stick foil, approximately 12x18 inches in size.

In a medium sized bowl, combine diced apples (with or without peels) and lemon juice. Add in cornstarch, sugars, cinnamon and butter. Mix to combine well and set aside.

Next, in a separate bowl, combine oats, flour, brown sugar and cinnamon; mix well. Add cold butter to mixture and cut in with a pastry cutter or two forks (this can be made ahead of time and frozen until ready to assemble).

Place 1/4 of the apple mixture onto the center of one of the pieces of non-stick foil, making sure the mixture is touching the non-stick side. Sprinkle 1/4 of the crumb mixture over the apples.

Seal foil packet tightly, making sure all sides are securely closed. Repeat with remaining ingredients, dividing equally among the 3 remaining pieces of foil.

Place the 4 foil packets on grill or over campfire for approximately 8-12 minutes, or place on a cookie sheet and bake in oven for approximately 15 minutes. Times are approximate as grill and campfire heating is harder to regulate than an oven.

Remove from heat and allow to cool for approximately 10 minutes. Carefully open foil packets as they will be very hot.

Top with a scoop of ice cream, serve, share and enjoy.

NOTE: You can use regular foil, just spray with non-stick cooking spray
