Fiesta Breakfast Bowls

Ben made this for us when we were in Minneapolis on our May 2019 trip. It was delicious.
You can also substitute chicken or turkey sausage instead of pork.

Ingredients

  • 2 t. canola or olive oil
  • small onion, sliced
  • 2 c. sliced bell peppers, or about 12 mini sweet peppers
  • 1 lb. ground breakfast pork sausage, in a tube (good quality)
  • 1 t. dried oregano
  • 1/4 t. ground cumin
  • ancho chili powder, to taste
  • salt and pepper, to taste
  • 4 eggs, optional (see Note below)

  • 2 avocados, mashed
  • ¼ - ½ c. salsa

Instructions

In a large skillet, heat the oil. Add onions & peppers to the skillet to soften.

When the onions and peppers begin to brown, move them to the edge of the skillet. Add the pork, chicken or turkey sausage, along with the oregano, cumin, salt, pepper & ancho chili powder.

While the meat and peppers are cooking, mash the avocado with a fork and set aside. If using eggs, you can start to fry the eggs in another pan just before the meat is done cooking.

Turn the pork over after a few minutes of cooking and break it up into chunks with the back of a spoon. Cook meat and peppers for several minutes more, until the meat is thoroughly cooked. Then push meat and peppers to one side, tilt the pan a bit to try and remove fat juices remaining (if any) using paper towels to absorb. Stir to combine the meat and vegetables.

Split the skillet contents between four bowls. Top each bowl with (eggs, if using) one-fourth of the mashed avocado and salsa to taste.

Makes 4 bowls.

NOTE: You could also add in 4 fried or scrambled eggs, if you'd like. Add it on top the meat mixture before adding avocado and salsa.
