Festive Fruit Gelatin
Pretty for Christmas
Ingredients
- 1 (3 oz.) pkg. lime Jell-O
- 1 c. boiling water
- 8 oz. unsweetened crushed pineapple, undrained
- 2 (3 oz.) pkgs. strawberry Jell-O
- 2 c. boiling water
- 16 oz. can jellied cranberry sauce
- 8 oz. pkg. reduced fat cream cheese
- 2 Tbls. cold water
- 1-1/2 t. Knox unflavored gelatin
- 1/4 c. milk
Instructions
In a small bowl, dissolve lime Jell-O in 1 cup boiling water; stir in pineapple. Pour into a 9x13-inch glass dish coated with cooking spray. Refrigerate until set, but not firm (about 1 hr.)
In a large bowl, dissolve strawberry Jell-O in 2 cups boiling water. Whisk in cranberry sauce until smooth.
Refrigerate bowl until partially set (about 1 hour, 30+ minutes – check every 30 minutes).
After the red Jell-O has been in the refrigerator for 45 minutes, sprinkle Knox gelatin over cold water; let stand for 1 minute. Microwave on high for 15 seconds. Stir and let stand for 1 minute or until gelatin is completely dissolved.
In a small mixing bowl, beat cream cheese until fluffy. Gradually add milk and gelatin mixture; beat until smooth. Gently spread over lime layer. Refrigerate until set, but not firm (30-40 minutes).
Gently spread partially set red Jell-O over cream cheese layer.
Cover and refrigerate until firm.
When ready to serve cut into squares, lift out with a spatula.
