Egg McMuffins

Make ahead and freeze, just thaw and bake.

Ingredients

  • 6 English muffins (we like Thomas Whole Wheat)
  • butter
  • 6 slices of pre-cooked ham, sausage patties or bacon
  • 6 slices of cheese (Swiss, co-jack or cheddar)
  • 6 eggs
  • salt & pepper to taste
  • Dijon mustard, optional (good with the ham and Swiss cheese)
  • diced bell peppers, optional
  • 2 Tbls. minced onion, optional

Instructions

Spray a large Teflon coated 6-cup muffin tin with cooking spray.

Whisk each egg individually (I do in a measuring cup) along with salt and pepper and in a little diced onion and bell peppers, if using. Pour each individual whisked egg into a greased muffin cup (I use an extra large 6-cup muffin pan; regular pan will work too. Continue until all 6 eggs have been used.

NOTE: you can also fry individual eggs to use.

If using muffin pan, bake at 350 degrees for 12-15 minutes or until eggs are firm. Remove to wire rack to cool.

If using bacon, cook in microwave or fry pan to your desired doneness, drain grease and pat bacon strips with paper towel to absorb the grease. Cut each strip in half.

If using sausage patties, fry in a pan to pre-cook, remove to a paper towel lined plate to absorb the grease.

If using ham slices no need to precook. I like the pre-packaged Jones breakfast ham round slices. A little Dijon mustard tastes great if you use Swiss cheese and ham.

Split English muffins and spread a little butter on each half.

Layer one half of each muffin with egg, top with ham, sausage patty or bacon (1 strip cut in half), cheese of your choice and top with other half of muffin.

Place on a baking sheet and bake at 350 degrees until heated through, about 10-15 minutes. If refrigerated, bake a little longer. If grilling, wrap each muffin in foil and place on grill for about 10-15 minutes until heated and cheese is melted.

If you want to heat later, either refrigerate or freeze. Wrap individually in foil, then with saran wrap (if freezing).

HOW TO REHEAT AFTER FROZEN: If frozen, thaw in refrigerator overnight and then in the morning, bake in foil at 350 degrees about 20 minutes then open foil up and continue to bake and additional 5-10 minutes to toast muffins. Enjoy.

NOTE: We like to make these ahead of time and freeze to take camping. We thaw individually and heat them on the grill.
