Edamame (shelled)

Edamame is a super food
This is a quick and easy recipe with soy and sesame oil

Ingredients

  • 1 lb. frozen shelled edamame
  • 3 garlic cloves, smashed
  • 1 Tbls. toasted sesame oil (see note below)
  • 1 Tbls. low sodium soy sauce (Kikkoman)
  • 1/4 t. kosher salt
  • toasted sesame seeds, for the garnish (optional)

Instructions

Rinse the frozen edamame under warm water in a strainer, then shake off excess liquid.

Smash and peel the garlic cloves.

Add the toasted sesame oil to a large skillet and heat over medium-high heat. Add the smashed garlic cloves and edamame and cook for 2 minutes until warmed through, but still bright green. DO NOT OVERCOOK.

Add the soy sauce and stir until evaporated, about 1 minute. Remove from the heat and stir in the salt. Discard the garlic cloves.

If desired, sprinkle with sesame seeds. Serve immediately.

Serves 4-6

NOTE: Toasted sesame oil has a strong, nutty flavor: it’s intended for flavoring foods. It adds a nice nutty essence to the shelled edamame.
