Honey Poppyseed Dressing
This is great on salads with berries and other sweet fruits in them; it compliments them nicely.
Ingredients
- 3 Tbls. apple cider vinegar
- 1 Tbls. honey (a little more to taste, if needed)
- 1 t. Dijon mustard
- 1/2 t. kosher salt
- 2 t. black poppy seeds
- 1/3 c. olive oil
Instructions
With a wire whisk, blend apple cider vinegar, honey, Dijon mustard, kosher salt and poppy seeds until smooth.
Whisk in olive oil, until all ingredients are blended, and dressing is smooth and emulsified.
Serve over your favorite salad, using ingredients of your choice.

Combos I like to use with mixed greens are:
Crumbled goat cheese, cranberries, diced pears and pecans.
Crumbled gorgonzola cheese, dried cranberries or raisins, sliced mushrooms, diced pears and pecans.
Crumbled goat cheese, sliced strawberries, kiwi slices with slivered almonds.
Crumbled gorgonzola or goat cheese, diced pears, pecans, raisins and crispy bacon.
