Source: Rachael Ray
Elegant with no little work. These are a bit rich in flavor.
Ingredients
- 2/3 c. whole milk
- 1 egg
- 2 Tbls. white sugar
- pinch of salt
- 1 c. semi-sweet or dark chocolate chips
- 2 Tbls. hazelnut liqueur, dark rum, amaretto, bailey’s Irish cream or crème de mint liqueur (your preference)
- 1/2 c. whipping cream
- 1 Tbls. powdered sugar
Instructions
Heat milk in small sauce pan over moderate heat until it comes to a boil.
In blender or food processor combine egg, sugar, salt, chocolate chips and liqueur. Run processor or turn blender to low setting. Pour in boiling milk in a slow stream. The hot milk will cook the egg and melt the chocolate. Process for 1 minute until smooth.
Spoon chocolate into 4 demitasse cups or other 1/2 cup glass dishes or wine/martini glasses.
When ready to serve, beat whipping cream until soft peaks form. Add 1 Tbls. of powdered sugar and beat to combine.
Top each chocolate cup with a dollop of cream.
Yields 4 half-cup servings. If you want larger portions, double this recipe.
NOTE: These need to chill several hours to set before serving.
