Date Nut Muffins

Ingredients
- 1 c. water
- 2 c. chopped pitted dates
- 1/3 c. light-brown sugar
- 2 Tbls. honey
- 1/3 c. butter, melted and cooled
- 1 egg, lightly beaten
- 1 Tbls. freshly squeezed lemon juice
- 1 t. vanilla
- 2 c. all-purpose unbleached white flour
- 1-1/2 t. baking soda
- 1/2 t. salt
- 1 c. chopped walnuts
Instructions
In a small saucepan, bring water to a boil; remove from heat. Stir in dates, brown sugar and honey; let stand 5 minutes.
Stir butter into date mixture; let stand 15 minutes or until cooled, then stir in egg, lemon juice and vanilla until blended.
In a large bowl, stir together flour, baking soda and salt.
Make a well in center of dry ingredients; add date mixture and stir just to combine. Stir in walnuts.
Spoon batter into greased or paper lined muffin cups until 2/3 full.
Bake at 400 degrees for 15-20 minutes. Cool 5 minutes before removing from pan.
NOTE: Makes 12 muffins.
