Dark Chocolate & Pecan Cookies

Soft, chewy dark chocolate and pecan cookies are a more sophisticated version
of the traditional chocolate chip cookie.

Ingredients

  • 2 c. unbleached white all-purpose flour
  • 1 Tbls. cornstarch
  • 3/4 t. salt
  • 1 t. baking soda
  • 1/2 t. ground cinnamon
  • 3/4 c. unsalted butter, softened
  • 3/4 c. brown sugar
  • 1/2 c. white sugar
  • 1 large egg
  • 1 t. vanilla extract
  • 1 c. chopped pecans
  • 1 c. dark chocolate chips

Instructions

In a bowl, mix together flour, cornstarch, salt, baking soda, and cinnamon using a wire whisk. Set aside.

In another bowl, with a hand mixer, cream together butter and both sugars on medium speed until light and fluffy (2-3 minutes). With the mixer on low, add in egg and vanilla. Increase speed to medium and mix until incorporated, scraping the sides as needed.

Add in dry ingredients, and manually stir using a wooden spoon until dough forms.

Stir in chocolate chips and pecans.

Refrigerate dough for 30-60 minutes. Dough should be firm.

Line baking sheets with parchment paper and set aside.

Form balls from approximately 1 tablespoon of dough.

Bake at 350 degrees for 11 – 13 minutes or until edges are just barely golden.

Remove from oven and let cool for a couple of minutes on baking sheet before removing and placing on wire rack, lined with paper towel to absorb grease and let cool completely. Store in airtight container.
