Cut Out Sugar Cookies

Almond flavor

Ingredients

  • 1 c. butter, softened (no substitutes)
  • 3 oz. pkg. low-fat cream cheese, softened
  • 1 c. sugar
  • 1 egg yolk
  • 1 t. vanilla extract
  • 1 t. almond extract
  • 2-1/4 c. unbleached all-purpose white flour
  • 1/2 t. salt
  • 1/4 t. baking soda

Instructions

In a large mixing bowl, cream butter, cream cheese and sugar. Beat in egg yolk and extracts. Combine dry ingredients and by hand, gradually add to creamed mixture.

Pat dough into two 8 or 9-inch disks and wrap in plastic wrap. Refrigerate for 3 hours or easy to handle. Note: You can also freeze the dough (disks) and bake when convenient. Just thaw in refrigerator overnight.

On a lightly floured surface, roll out dough to 1/8-inch thickness. DO NOT ROLL OUT TOO THIN. Cut with cookie cutters dipped in flour.

Bake at 375 degrees for 8-10 minutes. Cool 2 minutes on baking pan before removing to wire rack lined with paper towel to absorb the grease.

Frost and decorate as desired.

NOTE: Makes 4 dozen
