Cucumbers with Cream Cheese & Bacon
Makes for a great healthy and light snack or appetizer
Ingredients
- 1-2 medium cucumbers
- soft low-fat cream cheese (in the tub)
- center-cut bacon (1 piece will do about 5 slices of cucumber)
- Everything Seasoning (homemade or store bought)
Everything Seasoning
- 2 Tbls. poppy seeds
- 3 Tbls. toasted sesame seeds
- 1 Tbls. dried minced garlic
- 1 Tbls. dried minced onion
- 1 t. coarse salt (Kosher)
Instructions
To make your own Everything Seasoning, mix all ingredients together and store in an airtight container. You will have extra, save for another use like on my Avocado Toast.
Fry or microwave bacon. To cook bacon in microwave, place 6 pieces of bacon on a plate lined with 2 pieces of paper towel. Lay strips on plate and cover with a piece of paper towel. Microwave on high for about 3 minutes, or a little more, until crisp to be able to crumble. Transfer to a clean paper towel to cool a bit. Then crumble.
Wash cucumbers. Use a peeler to create strips in the outer skin. Slice cucumbers about 1/8th inches thick (or to your liking).
Place cucumber slices on a large prep mat. Spread each cucumber slice with a little cream cheese. Add a few pieces of crumbled bacon and sprinkle with Everything Seasoning to our liking.
Transfer to serving platter before serving.
NOTE: For 30 cucumber slices, I used 6 pieces of bacon.
