Creme de Menthe Brownies
Ben & Ryan's absolute favorite
Ingredients
Brownie Layer
- 2/3 c shortening (Crisco butter flavored baking sticks)
- 2 c. brown sugar
- 3 eggs
- 1 t. vanilla
- 1-1/4 c. all-purpose unbleached white flour
- 1 t. baking powder
- 1 t. salt
- 1/2 c. cocoa
Middle Layer
- 2 c. powdered sugar
- 1/2 c. butter
- 2 Tbls. milk
- 1 t. mint or peppermint extract
- green food coloring (1-2 drops)
Top Layer
- 1 c. dark or semi-sweet chocolate chips
- 6 Tbls. butter
Instructions
Brownie Layer: Cream shortening, brown sugar, eggs, and vanilla. Stir in dry ingredients.
Spread into a 9 x 13” greased and floured pan and bake at 350 degrees for 25 minutes. Cool.
Middle Layer: Mix ingredients with mixer and spread on top of brownie layer.
Top Layer: Melt butter in a small sauce pan on low heat; add chocolate chips and stir until smooth. Watch so that you don’t burn. Carefully spread over mint layer. Let stand at room temp until chocolate is set. Cut and store in refrigerator. Can also be frozen.
NOTE: Instead of mint flavoring, eliminate the milk and use about 2 Tbls. of Bailey’s Irish Cream, Frangelico or Kahlua (don’t use green food coloring or mint extract).
