Creamy Cheesecake

Ingredients

  • 5 (8 oz.) pkgs. cream cheese, softened
  • 1-1/2 c. white sugar
  • 6 eggs
  • 2 Tbls. fresh lemon juice
  • 1 Tbls. vanilla
  • 2 Tbls. all-purpose unbleached white flour
  • 1/2 c. whipping cream
  • 1/4 t. salt

Filling

  • 1-1/2 c. crush graham cracker crumbs
  • 1/4 c. melted butter
  • 2 Tbls. white sugar
  • 1 Tbls. ground cinnamon

Instructions

In a medium bowl, with a fork, mix the crust ingredients until crumbly. Pat mixture onto bottom of a greased 10" spring form pan.

Using a heavy duty mixer (or food processor) mix cream cheese until creamy and add sugar; add 1 egg at a time. Add 2 tablespoons lemon juice, vanilla, flour and cream. Do not over mix. Pour filling onto crust.

Bake on lowest rack in oven at 475 degrees for 10 minutes then 225 degrees for 1 hour, 20 minutes. Let stand in oven for 5 minutes. After turning oven off, cool on rack away from drafts.

Put in fridge 4-5 hours or overnight.
