Cranberry Shortbread Cookies
Perfect to make over the Thanksgiving or Christmas holiday
Ingredients
- 1 c. butter, softened (no substitutes)
- 1/2 c. white sugar
- 2 c. unbleached all-purpose white flour
- 1 c. dried cranberries
- 1 c. vanilla chips
Instructions
In a medium bowl, beat butter and sugar. By hand stir in flour and mix well. Stir in vanilla chips and dried cranberries. Dough will be stiff and crumbly. With your hands, shape dough into small round balls and place on ungreased cookie sheets; flatten somewhat with your palms.
Bake at 350 degrees for 10-14 minutes or until lightly browned. Cool 5 minutes then remove to cool completely on wire racks lined with paper towel to absorb the grease.
