Cranberry Orange Zingers

Source: 1 Master Mix ~ 51 Muffins Recipe Book

Ingredients

  • 1/2 c. canola oil
  • 2 eggs
  • 1/2 c. chopped walnuts
  • 1/2 c. milk
  • 1/2 c. orange juice (I use juice from an orange)
  • 2 t. orange zest
  • 1 c. chopped cranberries (fresh or semi-frozen)

Instructions

Preheat oven to 400 degrees.

In a large mixing bowl, mix the oil, eggs, milk, orange juice and zest until thoroughly combined.

Add Master Mix and stir until just combined.

Carefully fold in cranberries and nuts.

Spoon batter into greased or paper lined muffin cups.

Turn oven temp down to 375 degrees and bake for 15-18 minutes or until toothpick inserted in the center comes out clean. Remove muffins from pan and cool on a wire rack.
