Cranberry - Orange Cookies
Festive for the Christmas holiday
Ingredients
- 2 c. unsalted butter, softened (no substitutes)
- 1/2 c. white sugar
- 1/2 t. salt
- 1 egg yolk
- 1 t. vanilla
- 2-1/4 c. unbleached all-purpose flour
- 1/2 c. dried cranberries, finely chopped
- 1/2 c. finely chopped walnuts or pecans
- 2 t. finely shredded orange zest
Instructions
In a large bowl, beat butter for 30 seconds. Add sugar and salt; beat until combined, scraping sides of bowl occasionally. Beat in egg yolk and vanilla.
By hand, stir in flour until dough is mixed well. Fold in cranberries, nuts and orange zest.
Divide dough in half. Shape each into 9-inch long roll. Wrap in plastic wrap and chill for 3 hours or until firm enough to slice.
With a serrated knife, cut rolls into 1/4-inch slices. Place slices 1 inch apart on an ungreased cookie sheet.
Bake at 350 degrees for 8 to 10 minutes, or until edges are firm and lightly browned. Cool on cookie sheet for 1 minute. Transfer to a wire rack lined with paper towel to cool.
NOTE: Makes about 55 cookies
