Cranberry Orange Bread Pudding

Festive, not too sweet and easy to make

Ingredients

  • 1 1/4 c. fresh cranberries
  • 1 loaf thick bread, cubed (day old/crusty bread is best)
  • 4 c. milk
  • 6 eggs
  • 2 t. vanilla extract
  • 1 t. cinnamon
  • 1/2 t. cloves
  • 1/4 t. allspice
  • 1 c. granulated sugar
  • 2 Tbls. orange zest

Orange Glaze

  • 3 Tbls. butter, melted
  • 1-1 1/2 c. powdered sugar (start with 1 cup)
  • 1/2 t. vanilla extract
  • 2 Tbls. freshly squeezed orange juice
  • 1 t. orange zest (makes the glaze extra orange-flavored)

Instructions

Preheat oven to 350 degrees and grease a 13x9 baking dish.

Spread half of the bread in an even layer on the bottom of the baking dish. Sprinkle cranberries over the top. Place the remaining bread on top.

In a bowl, whisk together eggs, milk, vanilla extract, cinnamon, cloves, allspice, sugar, and orange zest until well combined.
Pour the egg mixture over the bread, making sure all of the bread is covered.

Allow the bread pudding to sit for 25 minutes or cover with saran wrap and refrigerate for a few hours, if you want to bake later (during dinner).

Bake for 45-50 minutes, or until the top is golden brown and the center jiggles only slightly when moved.

Allow to cool at least 10 minutes before serving (the bread pudding might deflate a bit while cooling; this is normal).

While the cranberry orange bread pudding is cooling off, in a small bowl, mix melted butter, powdered sugar (starting with 1 cup), vanilla extract, orange juice, and orange zest. If the glaze seems too thin, add in the last 1/2 cup of powdered sugar.

Drizzle over each slice of bread pudding.

NOTE: Serves 12

Leftovers can be reheated in the microwave, but it won't be nearly as good .
