Cranberry Broccoli Salad
Christmas Coleslaw
Ingredients
- 1-1/4 c. fresh cranberries, halved
- 3 c. broccoli florets
- 2-3 c. cabbage, shredded
- 1 c. walnuts, coarsely chopped
- 1/2 c. raisins
- 1 small red onion, finely minced
- 8 slices center-cut bacon, cooked and crumbled
Dressing
- 1 c. light mayonnaise (not miracle whip)
- 1/3 c. white sugar
- 2 Tbls. cider vinegar
Instructions
In a large bowl, combine cranberries, broccoli, cabbage, walnuts, raisins, onion and bacon.
Combine remaining ingredients, and just before serving, pour over cranberry mixture. Toss well.
Cover and refrigerate for up to 24 hours.
NOTE: Serves 6-8.
