Cranberry Apple Pecan Salad with Creamy Poppyseed Dressing

Perfect addition to you Thanksgiving or Christmas dinner.
The poppyseed dressing is amazing!

Ingredients

  • 6 oz. baby spinach, stems removed
  • 1 c. pecans, coarsely chopped
  • 2 granny smith apples, chopped
  • 1/2 c. low-fat feta cheese, crumbled
  • 3/4 c. dried cranberries

Creamy Poppyseed Dressing

  • 1/3 c. Hellman’s mayonnaise
  • 3 Tbls. milk
  • 3 Tbls. white sugar
  • 4 t. apple cider vinegar
  • 2 t. poppyseeds

Instructions

Dressing: In a small bowl, whisk together the mayonnaise, milk, sugar, cider vinegar, and poppyseeds. You can make ahead and refrigerate until needed. Whisk before adding to salad.

In a large bowl, toss baby spinach, pecans, apples, feta cheese, and cranberries. Pour dressing over the salad and toss to coat.

Serve salad immediately and garnish with more feta cheese if desired.

NOTE: Serves 8.

To make fewer salads, downsize recipe accordingly. Or you can assemble individual salads as needed, keeping ingredients separate.
