Country Style Scrambled Eggs

Nice change from plain scrambled eggs

Ingredients

  • 8 center-cut thick bacon strips
  • 2 c. red potatoes, diced small
  • ½ c. chopped onion
  • ½ c. chopped green pepper
  • 8 eggs
  • ¼ c. milk
  • 1 t. salt
  • ¼ t. pepper
  • 1 c. shredded cheddar or Swiss cheese

Instructions

In a large skillet, cook bacon until crisp. Remove to paper towels to drain.

In the drippings, add potatoes and cook until half cooked, then add onions and green pepper. Cook and stir until onions and peppers are tender-crisp and potatoes are soft. You may have to add a little extra oil or butter, if needed. Stir in reserved bacon, crumbled.

In a large bowl, whisk the eggs, milk, salt and pepper; add to skillet. Cook and stir until eggs are completely set. Sprinkle with cheese and let stand until melted or if you pan is oven proof, place under broiler for 1-2 minutes until melted
