Cornmeal Maple Muffins

Good with butter and or your favorite jam

Ingredients

  • 1 c. milk
  • 2 eggs
  • 6 Tbls. maple syrup (or breakfast syrup works)
  • 4 Tbls. light brown sugar
  • 2 c. all-purpose unbleached white flour
  • 1 c. yellow corn meal
  • 4 t. baking powder
  • 2/3 c. melted butter
  • butter and jam, optional

Instructions

In a bowl combine egg, milk, syrup and brown sugar.

Stir in flour, cornmeal, and baking powder.

Stir in melted butter and mix until well blended.

Divide batter evenly among greased muffin cups until 2/3 full.

Bake at 375 degrees for 15-20 minutes. Remove to wire rack.

Serve warm with butter and jam.

NOTE: Makes 1-1/2 dozen muffins.
