Cornbread
Goes great with Mexican dishes
Ingredients
- 2-1/2 c. reduced fat biscuit/baking mix
- 3/4 c. yellow cornmeal
- 3/4 c. white sugar
- 1/2 t. baking soda
- 1/4 t. ground nutmeg
- 1/4 t. baking powder
- 1 egg
- 1 egg white
- 3/4 c. 1% buttermilk
- 1/2 c. 1% milk
- 1/2 c. unsweetened applesauce
- 3 Tbls. butter, melted
- 1 Tbls. honey
- 1/2 t. butter flavoring
Instructions
In a large bowl, combine baking mix, cornmeal, sugars, baking soda, nutmeg and baking powder.
In another bowl, beat the egg, egg white, buttermilk, milk, applesauce, butter, honey and butter flavoring just until moistened.
Pour into a 9-inch square baking pan (or 4 mini loaf pans) coated with nonstick cooking spray.
Bake at 350 degrees for 30-35 minutes, or until toothpick inserted near the center comes out clean.
Cool on a rack for 15 minutes before cutting.
