Corn on the Cob: Baked Chili-Lime Corn on the Cob

Ingredients
- 1/4 c. butter, melted
- 2 Tbls. lime juice
- 1-1/2 teaspoons grated lime peel
- 1 t. chili powder
- 3/4 t. seasoned pepper
- 1/4 t. salt
- 4 medium ears sweet corn, cut into 3-inch pieces (if desired)
Instructions
In a small bowl, combine the first six ingredients.
Place corn in a greased 13 x 9-inch baking dish. Brush corn with half the butter mixture.
Cover and bake at 400° for 30 minutes.
Uncover; brush corn with remaining butter mixture.
Bake uncovered for an additional 5-10 minutes or until tender.
NOTE: You can bake corn on the cob plain as well. Leave husks on (it will trap moisture, leaving you with juicy, tender corn). Place in a preheated, 350-degree oven, for 25-30 minutes. Cut off the large end and it slides right out with no silk. Brush with butter and salt to your liking.
