Corn Bread Muffins

Very moist!
Especially good with butter and your favorite jam
Ingredients
- 2 eggs
- 1 c. buttermilk (see Note)
- 1/3 c. canola oil
- 1/2 c. honey
- 2 c. Master Mix
- 1 c. yellow cornbread
Instructions
Preheat oven to 400 degrees.
In a large mixing bowl, mix the eggs, buttermilk, oil and honey until thoroughly combined.
Add Master Mix and cornmeal and stir just until combined.
Spoon batter into greased or paper line muffin cups.
Turn oven temp down to 375 degrees and bake for 15-18 minutes (about 8-9 minutes for mini muffins) or until toothpick inserted in the center comes out clean. Check after 12 minutes to gauge doneness.
NOTE: If you do not have buttermilk on hand, you can substitute 1 cup milk mixed with 1 tablespoon white vinegar. Let stand for 5-10 minutes.
Makes 12 regular size and 12 mini muffins.
