Cookie Pizza

My boys loved this when they were little and now fun to make with grandchildren

Ingredients

  • 1-1/3 c. flour
  • 1/2 t. baking soda
  • 1/2 t. baking powder
  • 1/2 t. salt
  • 1/3 c. canola oil
  • 1 c. packed light brown sugar
  • 1 egg
  • 1 Tbls. hot water
  • 1 t. vanilla

Topping

  • 1/3 c. chopped nuts (walnuts or pecans)
  • 1/2 c. butterscotch or vanilla chips
  • 1/2 c. flaked coconut
  • 1/2 c. craisins or raisins
  • 1/2 c. chocolate chips
  • 1 c. mini or regular M & Ms (baking section)
  • 1 c. mini marshmallows
  • any other toppings of our choice

Instructions

In a mixing bowl, combine flour, baking powder, baking soda and salt. Stir in oil, brown sugar, egg, hot water and vanilla.

Grease a 12-inch pizza pan. Flour hands and press dough evenly into pan.

Layer with toppings of your choice.

Bake at 350 degrees for about 15-18 minutes. Cool and cut into wedges to serve.

NOTE: Another variation: Door County dried cherries, dark chocolate chips or chunks and chopped pecans.
