Company Casserole

Ingredients

  • 8 oz. elbow macaroni (we like whole wheat)
  • 1 c. low fat sour cream
  • 12 oz. cont. low fat cottage cheese
  • 6 green (scallion) onions, chopped
  • 1-1/2 lbs. lean ground chuck or ground sirloin
  • 8 oz. can tomato sauce
  • pepper to taste
  • 1/4 t. garlic salt
  • 1-1/2 c. shredded sharp cheddar cheese

Instructions

Cook noodles until tender and drain. Add cottage cheese, sour cream and onions. Set aside.

Brown meat and drain fat. Add salt, pepper, garlic salt and tomato sauce; simmer for 5 minutes.

In a deep 1-1/2 or 2 qt. casserole dish, layer as follows: 1/3 of the noodle mixture, half of the meat, another 1/3 of the noodle mixture, the remaining meat and remaining noodle mixture.

Cover and bake at 350 degrees for 30 minutes. Remove cover, add cheese and continue baking until cheese is melted.

NOTE: Do not substitute sharp cheddar cheese or green onions, or this will be very bland.
