Coleslaw: Simple Creamy Coleslaw

A classic and simple creamy coleslaw, perfect side dish for BBQ or pulled pork.

Ingredients

  • half of a medium cabbage, shredded
  • 1 large carrot, peeled and shredded
  • ½ small white onion

Creamy Dressing

  • 1 Tbls. distilled white vinegar
  • ½ c. Hellman’s mayonnaise with olive oil
  • ¼ c. low fat sour cream (Daisy)
  • 1 Tbls. white sugar
  • 1/4 t. ground black pepper
  • 1/2 t. celery seeds (not celery salt)
  • salt to taste

Instructions

Dressing: Whisk together the dressing ingredients in a large bowl.

Assemble: Add the cabbage, carrot and onion to the dressing. Taste, adjust seasonings if needed. Cover and chill for at least 1 hour before serving.

Serves 8

NOTE: For different varieties:

1 - Add ½ red or green bell pepper, sliced thin or diced
2 - Add 1 small, minced jalapeno (if you like it hot)
3 - Add 1 tablespoon of sweet pickle relish
