Coleslaw: My Mom's Coleslaw

This recipe came from the Columbus Club on Richmond Street (no longer exists)
Popular on Friday night fish fries.

Ingredients

  • 1/2 c. canola oil
  • 1 carrot, shredded
  • 1/4 c. water
  • 1/2 green pepper, chopped fine
  • 1 t. salt
  • 1 small onion, diced
  • 1/4 c. white vinegar
  • 1/2 c. white sugar
  • Shredded cabbage (amount depends on how many you will be serving)

Instructions

Blend all of the above ingredients in a blender except cabbage.

When ready to serve, pour dressing over shredded cabbage.
