Coconut Cranberry Bars

Can also use dried cherries instead of cranberries

Ingredients

  • 2 to 2-1/2 c. graham cracker crumbs (roughly)
  • 1 Tbls. white sugar
  • 1/2 c. melted butter
  • 12 oz. pkg. vanilla chips
  • 6 oz. pkg Craisins (1-1/2 c. dried cranberries or cherries)
  • 1 can (14 oz.) sweetened condensed milk (do not use no-fat)
  • 1 to 1-1/2 c. flaked coconut (I prefer unsweetened flakes, but shredded sweetened if fine too)
  • 2 oz. pkg. chopped walnuts or pecans

Instructions

Combine cracker crumbs (start with 2 cups), sugar and butter; press into a greased 9 x 13 x 2" baking pan. Crumbs should hold together nicely.

Sprinkle over crust as follows: vanilla chips, dried cranberries, coconut and nuts. Pour or drizzle sweetened condensed milk over all, covering the entire top.

Bake at 350 degrees for about 25 minutes, or until edges are golden brown. Cool and cut into bars.
