A simple take on classic toffee and the perfect combination of sweet and salty.

Ingredients

  • 1 sleeve saltine crackers (35-40)
  • 1 c. unsalted butter
  • 1 c. brown sugar
  • 1 t. vanilla
  • ½ t. salt (kosher or sea salt preferred)
  • 2 c. semi-sweet or dark chocolate chips (good quality)

Topping Choices

  • holiday sprinkles
  • mini red and green M&Ms
  • pecans

Instructions

Preheat oven to 350 degrees.

Line a 10 x 15-inch baking pan with aluminum foil and lightly grease.

Place saltine crackers on the baking pan to cover the entire pan in 1 layer of crackers.

Melt butter and sugar in a medium saucepan over medium heat. Once the butter is melted, bring it to a boil for 3 minutes, stirring constantly (scrape the sides often otherwise the sugar will crystallize on the sides of the pan). It must boil for exactly 3 minutes. If it doesn’t boil long enough, the mixture won’t set and will make the crackers soggy.

Remove from heat and stir in vanilla and salt.

Carefully pour the mixture over saltines and spread evenly over the crackers so all are covered.

Bake in oven for 8-10 minutes. Caramel should be bubbling vigorously when removed.

Sprinkle chocolate chips over the top and return pan to oven for 1 minutes (chips will start to look glossy).

Use an offset spatula to gently spread melted chocolate overall.

Sprinkle on toppings of choice. Let toffee set up at room temperature until completely cooled.

Once completely hardened, cut with a knife, into squares or use your hands to “crack” into pieces.

Store in an airtight container at room temperature for up to a week or in the refrigerator for 10 days. Can also be frozen.
