Chocolate with Cherries & White Chocolate Chips

Ingredients

  • 1/2 c. butter, softened
  • 2 oz. unsweetened chocolate, cut up
  • 2 oz. bittersweet chocolate, cut up
  • 2 eggs
  • 2/3 c. dark brown sugar
  • 2 t. vanilla
  • 1-1/2 c. unbleached all-purpose white flour
  • 1/2 t. baking powder
  • 1/2 t. salt
  • 2/3 c. white chocolate chips
  • 1 c. dried cherries

Instructions

In a large pot, melt butter and chocolates together, stirring until smooth. Remove from heat. Cool slightly. Beat in eggs, sugar and vanilla. Transfer to a large bowl.

In another bowl, combine flour, baking powder and salt. By hand, blend flour mixture into chocolate mixture. Stir in white chocolate chips and dried cherries.

Place dough on cookie sheets in silver dollar-size rounds.

Bake 10 minutes at 350 degrees for 10 minutes, or until cracked on surface and soft inside (do not over bake). Remove from oven and allow cookies to set on cookie sheet for 5 minutes.

Remove and cool on wire racks lined with paper towel to absorb the grease.
