Chocolate Sandwich Cookies

Cute for the holidays

Ingredients

  • 1 pkg. Devil’s food cake mix
  • 2 eggs, slightly beaten
  • 1/3 c. canola oil

Filling

  • 8 oz. low-fat cream cheese, softened
  • 1/2 c. butter, softened
  • 3-4 c. powdered sugar
  • 1/2 t. vanilla
  • red & green food coloring (optional)

Instructions

In a mixing bowl, beat cake mix, eggs and oil (batter will be very stiff). Roll into half-inch balls (the size of Milk Duds). Place on ungreased baking sheets and flatten slightly.

Bake at 350 degrees for 6-7 minutes or until a slight indentation remains when lightly touched. Cool cookies on wire racks lined with paper towel to absorb the grease.

Filling: In another mixing bowl, beat cream cheese and butter. Add powdered sugar and vanilla; mix until smooth. If desired, tint with food coloring. Spread on bottom half of one cookie, and top with another cookie.

Continue until all are assembled.

NOTE: You can use colors to fit any occasion (orange/yellow for Halloween; pastels for Easter, etc.)
