Chocolate Peanut Butter Banana Muffins
If you like chocolate, peanut butter & bananas, you'll love these muffins.
Very moist.
Ingredients
- 1/4 c. butter, softened
- 1/2 c. white sugar
- 1/3 c peanut butter
- 1-1/4 c. overripe banana, mashed (about 3 large bananas)
- 1/4 c. milk
- 1 t. vanilla
- 2 eggs
- 1-1/2 c. unbleached white all-purpose flour
- 1-1/2 t. baking powder
- 1/2 t. baking soda
- 1/2 t. salt
- 1/2 c. cocoa powder
Peanut Butter Swirl
- 6 tsp peanut butter
- toothpick
Instructions
Spray regular size muffin tin with non-stick spray.
To a large mixing bowl, add butter and sugar; beat together with a mixer untill creamy. Add peanut butter, banana, milk and vanilla; mix together until everything is well incorporated. Add eggs and briefly blend them in.
To the same bowl, add flour, baking powder, baking soda and salt.
Add your cocoa powder to the same bowl through a fine mesh strainer. By hand, stir everything together until you have a smooth, consistent batter.
Fill each muffin cup about 2/3 full of batter.
To Peanut Butter Swirl: Prior to baking, add an overflowing 1/2 teaspoon of peanut butter to the top of each muffin. Use a toothpick and gently swirl the peanut butter throughout the top of each muffin top.
Bake at 350 degrees for 18-20 minutes (check at 18 minutes) or till a toothpick inserted comes out clean.
