Chocolate Drop Cookies

Ingredients

  • 1/2 c. butter, softened
  • 3/4 c. sugar
  • 1 egg
  • 1/2 t. vanilla
  • 2 oz. baking chocolate (pre-melted packets) - see note
  • 1/4 c. milk
  • 1-3/4 c. unbleached all-purpose white flour
  • 1/2 t. baking soda

Frosting

  • 3 Tbls. butter
  • 2+ Tbls. milk
  • 1-1/2 c. powdered sugar
  • 3/4 t. vanilla

Instructions

In a large bowl, using a mixer, cream butter, sugar, eggs and vanilla. Blend in chocolate.

Add dry ingredients alternating with milk and mix by hand.

Refrigerate dough for several hours before baking.

Drop by teaspoons onto lightly greased cookie sheets.

Bake for 12-15 minutes at 350 degrees. Cool cookies on wire racks lined with paper towel to absorb the grease.

Frost with butter cream frosting. Mix frosting ingredients adding milk for desired consistency.

NOTE: If you can’t find pre-melted chocolate packets, you can substitute 3 Tbls. of cocoa powder and 1 Tbls. of vegetable oil or butter to equal 1 envelope of Choco Bake.
