Chipotle Sloppy Joes

Ingredients
- 1 lb. ground chuck or 1/2 lb. ground turkey & 1/2 lb. lean ground chuck
- 1/4 c. chopped onion
- 3/4 c. ketchup
- 1/2 c. frozen corn
- 1/2 c. canned black beans, rinsed, drained
- 1/2 c. tomato sauce
- 1-2 t. minced chipotle peppers in adobo sauce
- 1/2 t. ground cumin
- 1/4 c. chopped fresh cilantro
- 1/4 t. each salt and pepper
- 6 hamburger buns (we use whole wheat or bun toppers)
Instructions
Brown meat with onion in large nonstick skillet over medium heat, breaking up into crumbles, until thoroughly cooked; drain fat drippings.
Stir in ketchup, corn, beans, tomato sauce, chipotle peppers and cumin; bring to a boil. Reduce heat; simmer 5 minutes, stirring often. Stir in cilantro, salt and black pepper.
Place beef mixture on bottom half of each bun; close sandwiches and serve.
NOTE: Chipotle peppers in adobo sauce comes in a small can; use what you need and freeze (in a plastic container) the rest for another use.
