Chili: Ground Turkey or Pork & Black Beans

Ingredients
- 1 lb. ground turkey or pork
- 1 medium yellow onion
- 2 jalapeno peppers, divided
- ¼ c. + 1-1/2 Tbls. tomato paste
- 3 t. garlic powder
- 2-3/4 t. ground cumin
- 4 t. chili powder
- 1-1/4 t. oregano
- 1-1/4 t. smoked paprika
- 28 oz. can diced tomatoes (or Mexican flavored)
- 2 cans black beans (do not drain)
- 2 t. beef flavored Better Than Bouillon paste (or bouillon cubes/granules)
Garnishes
- low-fat sour cream, garnish (Daisy)
- Monterey jack, cheddar or Mexican blend cheese, garnish
- sliced jalapeno rounds
Instructions
Dice onion and mince 1 jalapeno pepper (remove the seeds). Slice the other jalapeno pepper into rounds and set aside for garnish.
Add turkey or pork sausage along with diced onion and minced jalapeno to a large soup pot. Season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through. Drain grease from pot, if any exists.
Stir in tomato paste and spices; cook stirring until dark red and combined, cook 1 to 2 minutes.
Add diced tomatoes, beans with their liquid, beef bouillon, ¼ c. water, salt and pepper to taste. Stir to combine, then bring to a simmer and cook uncovered, until thickened (about 8-10 minutes).
To serve, garnish with sour cream, jalapeno rounds and cheese.
