Chickpeas with Cherry Tomatoes & Feta Cheese

Makes a great side dish

Ingredients

  • 1 can chickpeas (garbanzo beans)
  • 1 c. cherry tomatoes, quartered (or grape tomatoes, halved)
  • 1-1/2 Tbls. fresh lemon juice
  • 3 t. extra virgin olive oil (Bertolli)
  • 1 t. dried oregano
  • salt & pepper to taste
  • 1/4 cup crumbled Feta cheese

Instructions

Rinse and drain chickpeas.

In a bowl, combine chickpeas with tomatoes, lemon juice, olive oil, oregano, salt, pepper and stir to coat.

Just before serving stir in feta cheese.

NOTE: Serve at room temperature
