Chicken: Pear Chicken Salad
Ingredients
- 6 c. spring mix salad greens
- 1 medium ripe pear, sliced
- 1-1/2 c. cooked chicken strips, warmed
- 1/4 c. crumbled low-fat feta cheese
- 1/4 c. dried cranberries
- 1/4 c. chopped walnuts or pecans
Dressing
- 2 Tbls. orange juice
- 2 Tbls. white wine vinegar
- 1-1/2 t. white sugar
- 1/2 t. grated orange peel
- 1/8 t. salt
- 1/4 c. olive oil
Instructions
Toss salad greens pears, chicken, feta cheese, cranberries and nuts.
In a small bowl, whisk the dressing ingredients, or shake in a covered container, to blend.
Drizzle dressing over salad and serve.
NOTE: Serves 4. If you don't care for Feta, you could substitute crumbled goat cheese.
