Chicken Ole'

A great one dish meal

Ingredients

  • 4-6 boneless, skinless chicken breasts
  • 3/4 c. uncooked Uncle Ben's long grain rice (we use brown rice)
  • 1-2/3 c. water
  • 8 oz. can of tomato sauce
  • 1 pkg. low sodium El Paso taco seasoning
  • 1 med. green pepper, chopped
  • 1/2 c. shredded cheddar/Monterey Jack cheese
  • salt and pepper to taste
  • fresh cilantro, garnish

Instructions

Grease a 9 x 13 x 2" baking dish.

Combine rice, water, tomato sauce and taco seasoning; mix well.

Pour into baking dish and arrange chicken breasts over rice mixture. Top with green pepper.

Cover and bake at 350 degrees for 1 to 1-1/2 hours. Uncover and sprinkle with cheese; return to oven until cheese is melted.

Garnish with fresh cilantro.

NOTE: Serves 4-6
